What's For Dinner?  Asian Sloppy Joes with Sesame Kale Slaw!

This is an easy family favourite just waiting to happen and ideal for a weeknight dinner.





Ingredients
  • 1 tablespoon canola oil
  • 2 cloves garlic (minced)
  • 1 tablespoon grated ginger root (about a 1 inch piece)
  • 1 bunch green onions (thinly sliced and white and greens divided)
  • 1lb ground pork (beef, chicken, turkey or vegetarian ground meat would work too)
  • 1/4 cup tomato paste
  • 3 tablespoons hoisin sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • 1/2 cup water
  • 1 tablespoon fresh lime juice
  • 2 cups store bought kale slaw (or your favourite variety)
  • 1 tablespoon fresh lime juice
  • 2 teaspoons sesame oil
  • pinch of salt (abut 1/8 tsp)
  • 6 small ciabatta buns
Directions
  1. In a wok or large sauté pan, heat canola oil over medium-high heat. Add garlic, ginger and whites of the green onions and stir fry until they begin to soften, about 30 seconds. Add pork and stir fry until cooked through and no longer pink.
  2. Add tomato paste, hoisin sauce, soy sauce and sesame oil and stir to combine. Pour in water and add lime juice. Simmer until slightly thickened. Remove from heat and stir in remaining green onions.
  3. In a separate small bowl, combine kale slaw, lime juice, sesame oil and salt. Meanwhile toast small ciabatta or brioche buns.
  4. Pile toasted buns with meat mixture and slaw and enjoy immediately.
